**New Flavour** Coconut

This flavour tastes like Pina Colada but without the alcohol.  Coconut shreds are actually used quite often to cover a Red Velvet cake that has been frosted with Cream Cheese in America.  Although I haven't tried it yet on a Red Velvet, it looks really nice ie. must taste good.  Or I would hope.  Admittedly Coconut is not for everyone but this flavour is quite subtle with a Italian Meringue Buttercream infused with a subtle flavouring of coconut milk and coconut cream.

*New Flavour* Raspberry Ripple


Some people like cupcakes for sentimental reasons and this one just hits the mark with me. Even before I bite into it, the sweet smell of Raspberries combined with the sugary smell of the buttercream starts bringing me back through the years. This Buttermilk cupcake with Raspberries stirred through it just reminds me of the Raspberry Ripple ice cream by Walls that I used to eat as a kid. It's not quite as sweet as the ice cream version as the tartness of the fruit really comes through beautifully in the buttermilk cake.

A lot of people are perfectly happy with Chocolate or Vanilla cupcakes but you can always put a spin on things. Add fresh whole fruit or fruit puree to the Vanilla cupcakes and voila! A zing of flavour in every bite!

Ingredients: Butter, Sugar, Flour, Buttermilk, Raspberries
Pictured above with Raspberry Buttercream and piped in a rose swirl pattern. I think the next time I am going to puree the fruit first then mix it in with the buttercream. It looks great like this when you can see the sprinkling of fruit throughout the buttercream but when piping, it clogs up the tip and creates little gaps in the pattern. I'm a bit pedantic like that. ^_*

Lemon Meringue Cupcakes - Order now for Summer


This all time classic pie has been reinvented in cake form some years back and it's popularity has grown everywhere! I can't say that I'm a fan of the pie version but I'm definitely a fan of the cake version. You can order them from me with the meringue freshly browned from the oven.

Here they are prepped with the snowy white meringue and waiting to go into the oven for a bit of browning

The cupcake is a lemon cupcake made with lemon zest and then filled with tart lemon curd to give you that extra burst of fresh flavour once you've sunk your teeth through that marshmallowy meringue. This will hold up for outdoor do's in this warm weather that we're having.

Cupcake Flavours: Frutti

Cupcakes come in all sorts of flavours but some of my favourite are those with fruit mixed in. The natural sweetness of fruits create a wonderful balance to the richness of the cake and frosting. Here are some of my favourites:

Blueberry & Cream Cupcakes

Bananarama - Banana is great on it's own, even better as a cake/bread, so it's natural that as a cupcake it rocks. Best eaten with Cream Cheese Frosting.

Strawberry Sweetheart - Chopped fresh strawberries are used in this cupcake so there are strawberries in every bite. This cupcake makes a pretty-in-pink treat when paired with Strawberry Meringue Buttercream made with strawberry puree. You will be able to smell the strawberries before you even bite into it.

Strawberry Filled - Another tasty option is a Butter/Vanilla cupcake with strawberry jam filling.
*Strawberries are seasonal, so will depend on the seasons.

Lemon Demon - Fresh lemon peel folded into the cupcake batter that gives you images of summer with every bite.

Lemon Meringue - Who can resist tender lemon buttermilk cupcake with a goey lemon curd filling topped with marshmallowy meringue? No one!


Blueberry - Slightly lighter than their muffin cousins, these fruity cupcakes are reminiscent of summer. They can be paired with whipped cream topping or for more packed flavour, cream cheese frosting.

Raspberry Ripple - Raspberries are folded into this Buttermilk batter to create a flavourful and slightly tangy cupcake. The buttermilk cake yields a wonderful crumb to this cupcake. Shown below with Raspberry buttercream. One bite and it will catapult you back to the last time you had it's inspiration - Raspberry Ripple ice cream.
